A fine sandwich with a wonderfully juicy sour dough baguette. The sour dough and the potato flakes in it allow long storage. Perfect for preparing in advance because you can store it filled in a fridge.

10 Soft baguettes rustique
Yellow pea mix: 400 grams of peas, olive oil, black garlic, turmeric, water or broth
100 grams of spinach
500 grams of grilled vegetables
300 grams of feta cheese
100 grams of parsley

Instructions

Cook the yellow peas in broth or water to make them tender but not too mushy

Blend the peas to a smooth purée with a food processor or blender. Add some extra virgin olive oil and water if needed. You may also add black garlic and turmeric. Remember that the mix will become thicker as it cools

Spread the yellow pea mix on the bottom half of the bread

Distribute the spinach leaves evenly above

Add the grilled vegetables and feta cheese

Top with the parsley
